Vegan might be tough. Fish sauce is used in everything. I'm not even sure that many Thai's understand the concept of vegetarianism/veganism. It just comprises a much smaller subset of the population than it does in the West. I was vegetarian for years, and when I got to Thailand I was thankful that I wasn't at that time. Outside of Bangkok may be especially tough.
