Nope, more common is coconut juice or milk, at least in southern dishes. I prefer my curries with some coconut milk...very nice.

I think being a vegetarian in Thailand would be a breeze. Buy from the food stalls near the wats would be my suggestion. I've always found more vegetarian food available there.
