Indian curries use spices to create intense flavors. Thai curries can be great but it seems to me the Thai chile is just fire no flavor. But to soak up that Indian currry with a roti, or a hunk of nan is heaven. I am off white rice for awhile.

It also seems to me that Keo Wan and Massaman are getting sweeter by the month.
