The restaurant should have the standard plastic device that removes the water from salad by spinning it at a high rate. A good one costs about 700 baht.
I purchased one after hearing a chef say that if he had to choose three kitchen implements, one of his choices was a salad spinner. It really does remove the water thats makes a dressing watery.
