AO: for you....

Tomcat's Pesto

(actually, this is a common recipe that no one, as far as I know, can claim individual credit for)

*2 cups lightly packed basil leaves (I sometimes pack them in more tightly to get a bit more sauce)
*1/2 cup olive oil (extra virgin only)
*at least one clove of garlic (I usually use 3 or 4...the local stuff can be mild)
*2 tbspns pine nuts (but what is available is so mild you could easily add 3 or 4)
*salt and pepper to taste

Dump all the above in a blender/food precessor and voila! your sauce is done.
Cook the pasta (DeCecco is by far the best) al dente, drain. Diners can add the pesto to their bowls of pasta and mix, adding freshly grated parmesan. I also add dried chili flakes that I bring from the States.

It's that easy and very satisfying.

Let me know if you make any variations (like using parsley instead of basil, or using the local Thai basil...a very interesting dish!)
