Continuing the the pasta sauce theme:
TOMCAT'S ZUCCHINI SAUCE (RECIPE #4)
(another uncooked sauce)
2 cloves garlic minced or finely chopped
1/4 cup olive oil
2 cups shredded zucchini
6 stalks chives (I've also used spring onions)
3 tblspns chopped parsley
pinch oregano
1 tspn salt
to taste freshly ground black pepper
Dump everything into a serving bowl, mix well and allow to rest (covered, unrefrigerated) for at least an hour. Cook the pasta, add a little parmesan if you like (though, again, cheese isn't normally served with uncooked sauces).
