Books for Hotel and Tourism that are recommended are:
High Season, comes with Cassettee tape also.
There is another one that deals a lot with hotel industry as well, and is being used by some of the staff at the Armari hotel in Patunam and they liked it. I can't remember the title, but it is directly focuses on Hotel mostly and it comes with a CD as well. Has quite a bit of real life situation role plays to work with also.
Go to Rham Universerity and to Chula and check out their bookstores and see what they use and maybe you can adapt their material to yours.
You might also want to go around and see what other Hospalitiy business are using as well, and get some ideas. It is a good market in Bangkok.
