*ahem*....this is a recipe thread, ladies. Kindly keep your purses where I can see them.
Pauly: I'm not a wine maven...but I can tell you I drink only chilled light reds with my pasta: a Valpolicella (Central Chitlom-B599) would fit the bill nicely as would a Bordeaux or a Beaujolais. I haven't found a reasonably priced chianti that I like, however, the search is still on.

Tomcat, do you have a good method for carbonara? My first attempts were gummy/dryish until I started adding cream -- but I've been told this is heresy.

Hombre: Sorry, I don't do sauces with red meat (or bacon) of any kind. I do have some recipes that include sea food (my clams and zucchini is the best I've ever tasted), but that's it for animal protein.

It's heresy because the recipe come from depression-era cooking in Italy, when all they had was a little pork fat, pasta, and grated parmesan cheese.
They cooked the noodles al dente so that they would expand in the stomach and make everyone feel "full."

Wow, hard to imagine a life without bacon! I use it as the base for most of the soups I make -- even my white bean puree and bread and brocolli soup. And cassoulet! Aren't you ever tempted?
