For me, Balsamic vinegar. I put it in everything.

I marinade my steaks for 48 hours in coca cola.

Tabasco, red, green or brown.

Oyster & cornbread stuffing:

4 stalks clery
1 yellow onion
1/2 stick (1/4 cup) butter
turkey giblets and neck meat, chopped
5 cups corn bread crumbs
1/4 cup chopped fresh parsley
1 teaspoon chopped fresh basil
1 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon freshly grated nutmeg
2 teaspoons fresh whole sage leaves, rubbed & chopped
2 eggs
1/2 pint small oysters, including the juice
salt and pepper to taste

Absolutely amazing - I make a double recipe every year at Thanksgiving.

Bring your steaks up to room temperature and then quickly seal them in a red hot pan that has no oil in it.

Can you by Kidney beans here in LOS? I've been meaning to cook up a pot of chilli for a load of friends for ages, but i've never actually seen them for sale

You'd want pinto beans for semi real chile, real has no beans. Dryed pintos at Foodland, kidneys in a tin at Foodland and Villa. Good idea Cream.

Of course you can...all the major supermarkets have them. I make chilli once or twice a month.

Now, a fun thing to do with the leftovers.....

reheat the chilli until almost all of the liquid is gone.
get some good eggroll wrappers...the bigger the better.

spoon 1-1/2 tbsp on the wrapper
add fresh onions, bell pepper (capsicum for the American English impaired ) and cheese. Roll them up and deep fry them.

I do this with both leftover taco and chilli sauce/meat. It makes a quasi-burrito that can be reheated in the microwave for snacks and stuff.

I like the green tabasco the best...to me its really more flavorable but doesn't really have the heat. Louisiana hot sauce or Crystal hot sauce is much better though in my opinion.
