Can anyone recommend a decent fitness centre in Chiang Mai, equipped with a pool, gym and preferably spa/sauna too!

I don't think what you're looking for is available in CM, although it may be.

However, there's a well equipped gym on Nimmanheimen (soi 6?), but I don't think it has a pool. However, it's less than 500 M from CMU where you can use the Olympic size pool for a nominal fee.
