Of course this falls into age categories, schools and levels.

Students can sit where they like. They're university studentsIf they're working in groups, I'll tell them to move their chairs into small circles.
Just me.
Every lesson requires planning, some more than others. If it's a writing course, there will be marking that needs to be done before the subsequent class.

Back when, greetings were English Circle Time and speed sounds, choosing the 'assistants' for the day, weather. Depending on the day of the week and lesson, general classroom routines, marking the roll, interactive discussions, guided reading/writing.
Primary kids are fun, songs, TPR activities first up also.
