I understand Thais put a lot of importance on appearance. Would a tidy short sleeved shirt be acceptable for work/interviews, or would a long sleeved shirt be preferable?

Short sleeve is better, actually. Too hot for long sleeves. Invest in a nice silk Thai shirt - it will pay dividends.
