I'm planning to get on a plane next month bound for Bangkok to search for an ESL teaching job. Do schools require that university degrees or other necessary documents have either an apostille or certificate of authentication? Thanks.

Things have changed. Most of the bigger schools require authentication now. Still, it is Thailand - you may get away with fake paper but it would make for a nervous career.
Employer's may want them authenticated but typically don't.
Thailand is not a signatory to the apostille treaty so an apostille is NEVER necessary.
Immigration will want to see your original degree and may also ask for an original transcript if you change your status in Thailand.

I recently did all the visa/work permit malarkey. You need original copies of all your paperwork. It doesn't need to be authenticated.
