Which language would the book be in TC? Now, you being a bit of an expert in foods of the world, are the AUTHENTIC essential ingredients available locally to then cook truly Morrocan dishes there?

Well, as the chef is Thai, I suppose it would have to be in that language...unless she can read English or French.
I don't know what's available locally to prepare Moroccan cuisine well. A good quality couscous would be a start as well as a couscousier in which to cook it. A recipe for home-made harissa is a necessity. Beyond that, lamb, pigeons, chicken for protein and a supply of upmarket, non-sulphurized dried fruit would certainly be important.

I have only eaten pigeon once-it tasted like the smell of a walk through Hyde Park, with all the statues-bllllllleh! Is pigeon a mainstay of Morrocan food?

Pigeon's lovely. I had Game Pie last weekend, with pigeon, pheasant and rabbit.

Around here, pigeons are predominantly a wild bird - not inner-city vermin like you find in urban areas.

Many Moroccans, like their Arab brethren elsewhere, raise pigeons on their rooftops..sometimes to eat, other times for competitions or just as a hobby. I've had an Algerian version of Moroccan pigeon pie that was tasty, though the bird parts were a tad chewy.

Hey Tomcat, next time I think about opening a restaurant or eaterie of any kind Iwill email you first to get your expert knowledge. I am amazed with your knowledge that you dont own a chain of restaurants!!!! So tell me what is your job at the moment? What are your quals to flame or fame a particular establishment? Are you retired or just waiting for Egon Ronay to snap you up as his PA?

Dearest CM: as AO has posted, all reviews are opinions. You had your shot, the BKKPost had its shot, and I had mine.
However, poor James really did shoot himself in the foot with the Moroccan menu items (at which most of my comments were directed). I have lived, worked, and eaten locally in North Africa, both in restaurants and in private homes: I know how many dishes are prepared (especially something as widely served as tajine) and what it is supposed to look and taste like. That's my experience and the basis for my comments. Unfortunately, James has none.
The review wasn't personal (as you should have picked up on), it was about food preparation. However, why not make another visit and tell us all about what you ordered, and the wine you chose.
Other opinions are always welcome as no one has the last word on food.
Opinion, CM, opinion. that's all it is....now get some rest, you may have customers tomorrow.

Hey Cookie Monster-TC can defend himself well enough. I consider him a mate of mine, and will defend him if necessary. TC has more common sense than to instantly reply to "cookies" like you. When it is appropriate, he will make comment.........
